It seems like a lot of people here are having trouble understanding how discarding excess resources and taking those of your opponent work in this game. This isn't surprising, as it took me several plays to understand. I think, rather than the highlighted resources on the respective fields, have the icons for the resources on the banner at the top of the screen and have the players click those. BGA's rendition of Tapestry could be a good model for this.
While you're at it, maybe also add a "skip discard" button, if applicable, and maybe a confirmation button after making a selection (e.g. "Discarding [barley] and [hops]"), just so things are clear. There was one point in my latest table where I couldn't tell whether I was clicking the resources I wanted or the ones I didn't want, so this could help with that. -

I hope the forthcoming tutorial is gonna help.
I can't display so much resources (up to 15+) on the banner as you're also including the ones in your stores.
I don't know what to write instead of "you must choose 3 resources to give" if it's not clear enough...
same for the "discard" part...
What about the following:
There are only 5 different type of resource (water, wheat, barley, rye, hops). Let the player collect all resource they get. If there is not enough place to store all of them, display the following message:
"You own 11 resource, but you have only 9 storage units. Please discard/give a resource: [discard water] [discard wheat] [discard barley] [discard hops]".
(note: a button to discard a resource type (e.g. rye) is not displayed, when the player does not own that resource type)
The player can then click a button to discard or give one resource. Then update the message:
"You own 10 resource, but you have only 9 storage units. Please discard/give a resource: [discard water] [discard wheat] [discard barley] [discard hops]".
