I believe that harvests should be simultaneous. There are so many harvests that each take so many individual steps, and for each one you have to wait for each player to take each step, and they have almost no interaction among the players. I can think of fringe cases where what someone else does might influence what you do for the harvest, but it's so minor that for most games I believe it's not worth the additional ~hundred turns they add to the game, it makes the game basically unplayable in turn-based.
Perhaps there could be an option when you are creating the game for either "turn-based" harvests (like the current functionality) or "simultaneous harvests" (where as soon as you go into the harvest phase, everyone does their own personal harvest). The people who really care about being able to see what other people do for their harvest can keep using the current functionality, while people who don't care can make their games a week shorter. -

Report history
A short calculation on the back of a napkin implies that simultaneous harvests would shave of about 15% of time in a turn based Caverna game, which is significant.
By now I have played hundreds of games. I don't think I was ever influenced by what opponents were doing during harvest.
The biggest waste of time during harvest is breeding, where the game halts to have you reorganize your animals, while there is plenty of space. And also when you have a ruby but no possibility to create a new breeding pair.
Instead of doing it simultaneously, automatically completing the turn of each player that cannot or don't want to do anything particular will speed it up a lot, while still allowing those who need to reorder animals or want to use rubies the chance to do so.
